Turok because that was VR to me, as a kid.
Excite bike idea would make a wild ride!
Metroid Prime Echoes because the last half of the game is unbelievable.
The Elder Scrolls, what ever they release next (barring mmo) would be fun in VR.
If we are talking reinventing, then I'd love all of the 2D metroids and Ocarina of Time!
