The creators of Crysis has explicitly stated the following:

1) Crysis cannot run at optimal detail on either the PS3 or 360.

2) The Crytek Engine will be available on both the PS3 and 360. Therefore, it's likely the PS3/360 will be capable of handling the engine, just not this specific implementation of it, manifested in a game called Crysis.

Also, simply look at the system specs. It's pretty clear the PS3 isn't capable, and the obvious bottlenecks are DirectX 10 and RAM. The recommended specs for Crysis: 2 GBs of RAM. The PS3 has 512 MBs. Even with optimized RAM, that's a problem. No one is saying the game is literally incapable of running on the PS3; just not at full detail, that's all.
