Alan Wake was a beautiful treat, even when it was a bit ugly on certain parts:
While it was already on PC and looked much, much better there, the work of CD Projeckt on the 360 port of The Witcher 2 is noteworthy:
(btw game is free on 360 right now, go get it!)
And I always loved the simplistic but loveable graphics of Geometry Wars 2:
