To be honest, yes it would be great if all games had an easier mode. But I wont complain if the devs don't want to add an easy mode (if that's their intent) and they shouldn't complain if I don't buy it because of that. And I doubt its difficult to program an easy mode.
My first experience was with Demon's Souls. Loved the atmosphere, the style, the monsters etc..I was so pumped to play it when I got it Day1...but then I just couldn't get far at all because I kept dying and now I will never attempt to play it again. And because of this, I've turned away from the Dark Souls series and Bloodborne as well. As much as I love the art style and gameplay of those games I just wont spend money on games that I know I can't finish. So because of this, I now just simply turn away from these games.
Sure many of you have finished the game and some probably think my reason is ridiculous, but every gamer is different and has their strengths and weaknesses. I've met gamers that just couldn't deal with games like Street Fighter or CoD multiplayer saying that they're not skilled enough and will never play/buy it again. Whereas to me I find I'm pretty decent at it, but nothing to look down at them for if they can't play it.
But if all it takes for games like the Soul series is to just add an easy mode I can't see why they shouldn't add it and gamers like me will definitely buy it again giving their sales an extra boost. But I'm not complaining.
