Artistic point of view: Zelda U
Purely from a technical point of view: the original Gears of War. It was the first game which I though started to look somewhat 'photorealistic' (that is, ignoring the color palette) and made me realize how big of a chance HD really was. Funny thing is that I would now consider Super Mario Sunshine to be the better looking game. Realism tends not to age well.
I was also pretty impressed by the gaphics of Ryse when I first saw it, but it wasn't as big a game changer.
