There were some really random parts in the original that either killed the narrative momentum or just felt totally out of place. One example is that weird mining minigame you have to play before entering that Ancient Forest, or whatever it's called. I fully expected that, most of the railroad sequence, some Gold Saucer stuff, among other things to be cut in a remake. Considering what we know now, it's hard telling what they'll actually keep - aside from the infamous Honeybee Inn sequence, and iconic stuff like Sephiroth walking into fire.
