Link's gender is as relevant as any other character's gender in any other story. you'd be correct about his limited personality, but you couldn't give me one particular reason that ANY character really should or should not remain a certain sex
I would argue that Link's LACK of personality makes his sex remaining consistent even MORE important. the character in itself, besides bravery and fighting skills, has almost no unique traits. Link being male is one of the very few things of which people immediately recall. The more you homogenize an already somewhat basic character, the less memorable or valuable they become
Link is a male and has been for decades, it's just silly to change him now for the sake of you difficult to please and entertain gamers
