Personally, I almost always know what I want. Those tiny xbla demos swayed me a couple of times--mostly because I had no idea what the game was about. With high profile games, I don't use them. I prefer to go in fresh.
I did play the last couple of Forza demos and came away quite impressed but not impressed enough to buy the games (though I did get both Horizon games at super low prices).
