3rd party developemnt works on a lowest common denominator structure. This means that for PS2/PSP/Wii development, the art assets will first be developed for the weakest system (PSP) and then ported over to PS2/Wii or from PS2 to Wii if no PSP version is in development. This ensures it runs on all versions, saves money (because art is the most expensive part of game development), saves time, and ensures a similar experince across all platforms.
Taken up to X360 and PS3, same rules apply. They'll plan the art assets to ensure they work largely equally on both platfor, develop them on one console and port to the other.
Art assests from X360/PS3 to Wii/PS2 are almost never shared because the texture resolutions are too high.
