Yeah, bad choice really, if he wanted to see what TES is all about he should've played Morrowind, but at the same time answer to why I'm talking about RPGs when it comes to Zelda - sure, technically, Zelda is not RPG, but I'm having a hunch that they will try to incorporate some aspects of open-world WRPGs in new Zelda.

Honestly, playing games from other devs and taking some good stuff is not such a bad idea - for example, most people maybe don't know it, but Ultima and Wizardry, both cRPGs, had quite an influence on japanese RPG devs in those early days, just like Zelda influenced lot of western devs.

He's already said it won't be like that game. He said he only wanted to replicate Skyrim's "feeling" of being in an open world. Which he's done.

I don't think so at all. They don't even like calling Zelda U open world, and Aonuma rarely plays games at all. He didn't beat Skyrim. He just played it a big because it was popular. Again, unless those games play like Zelda 1 or Wind Waker, Zelda U needs no tips from those games at all.
