Metal Gear Solid 5, The Last of Us, or Grand Theft Auto 5 which is more deserving of its 10/10 score?

None of them. All three have noticeable and glaring flaws in its design compared to its competitors at the time.

I honestly think current measurement of scoring is quite broken. While many suggest to remove score entirely, I think better approach is uncapped from base 10, instead of percentile.
