I use the DVDShrink + DivxConverter (or Auto Gordian Knot) combo I get great quality videos in about 1.5 Gig (but converting can take up to 2 hours). Once they're on Divx you can use Mediacoder to convert them properly for your iPod and PSP.
I wouldn't use Mediaconvert to convert into DivX files though, it never works.

The PS3 OS is installed in the internal memory of the PS3, as is every firmware update. After swaping the HDD the PS3 will only prompt you to format the new HDD, that's it.
