Guerrilla Games have tried to discourage them being called Dinosaurs, they're called The Machines by GG.

 

As for why they look like that, for one thing the game is set about 1000 years after modern day human society has fallen.

IMO Humans made a technology to collect the resources they needed, after a huge catastrophe wiped out billions of people and that tech has now evolved into the various species we see.

The Grazers need back up from The Watchers scanning for anything that could stop them from collecting nutrients (the green containers on their backs), the Thunderjaws are the defense for the herd (there could be smaller Raptor or Cats like ones, that are more mobile), the Long Necks are a mobile Communications Arrays (see the huge satellite dish on each of their head's) and the Storm Bringers are areal detectors, with the ability to scout the lay of the land from the sky and maybe attack from above when needed.

I think we'll see other species that have various other purposes, based on the resources the herds are made to harvest.

 

I'm sure The Machines are more than just resource collectors now, but they've evolved to fit in with their environment.

 

The creators may or may not still be alive and they could even be something other than Humans, like an Alien race or perhaps Humans made an AI, that built the ancestors of the machines we see in the demo.
