I actually think I played Diddy Kong Racing before Mario Kart 64. I'd still say I enjoyed that game more than MK64...though it's definitely aged too much to compare it to later MK games. Still, it was a real blast. I loved the hovercraft and being able to fly through tracks. It'd be pretty cool to see features from DKR brought into a future Mario Kart game.

I didn't play any NES/SNES racers until much later.
