I would vote for Half-Life simply because they are unmatched as far as single player shooters go. Everything from perfect difficulty curves to varied and intelligent level design to their heavily refined, bug free experiences. Only a handful of FPS RPGs like System Shock and Deus Ex even come close. As far as multiplayer I would have to vote for Counter-Strike, the other dubious omission from your list :/
