Kenny's first poitn nails this question. Big games take 2-3 years of planing and development of which the Wii obviously hasn't been out that long. Prior to Wii launch, most publishers wrote off the Wii completely put all resources behind X360/PS3.
Cobretti2 noted as I have before that E3 will provide the first opportunity for publishers to show what they've done since the popularity of Wii become evident.
