Personally I think it's better not to know then to know years beforehand and have to deal with delays or cancellations along the way. Honestly that is my major worry with the FF7 Remake, that we're still years away from seeing the game completed.
Only exceptions are Kickstarters (for the better really) and like kitler said, the Zeldas, Halos, or Uncharteds.
