Honestly think a Attack On Titan concept could work well for a MMO.
A Log Horizon MMO? would be so differnt from other mmos (because all crafting would have to be done like in the real world, stuff like that).
Tokyo Ghoul RPG would be intresting.
"Is it wrong to try and pick up girls in a dungeon" as a rpg as well, think it would be fun.
