I can give you something that points to a later release: It's on the PS4, as has been shown time and time again by now development cycles at least for first games on the new hardware are getting longer this gen, so expecting the game next spring is just unrealistic (even more so since they already have 2 huge franchises planned for spring: UC4 and SFV).

PS4 was confirmed by Mark Cerny to have a much shorter time to triangle compared to PS2, more like PS1.
PS4 is an X86 machine, it's simple for developer to get their games on the system.
Bloodborne is a very big game, yet it was a new IP and development began in August 2012, which really doesn't support your point of development taking longer this gen, that's one example, delayed games aren't the common thing this gen, it's actually the opposite of that.
Technically most God of War games have come out in late winter, because they released before the 20th of March, that's when spring starts, I didn't say spring, I just said March. ;)
Uncharted may not come out until closer to Summer, Street Fighter could be whenever really. So far I don't think Sony has really confirmed any release dates for their 2016 line-up. God of War would sure as stand out and be something huge to push numbers of hardware until Uncharted releases.

And one game doesn't negate all the other examples, I love Bloodborne but it's not exactly aiming for the best possible graphics on PS4, something that I'm sure you will agree is going to be the case for GoW 4, graphical fidelity takes time.

I'm not making a thing up, compared to the number of games that have actually come out the delayed ones are really far from the norm.
Bloodborne is an example of a very big, new IP that only took like 2 & 1/2 years to develop, it's actually one of the best looking games this generation so far, it's a gorgeous game!
God of War isn't open world as far as we're aware, well past games haven't been, open world games take more time and it isn't a new IP, nor is it being developed on complicated hardware. If developers implement multithread and Async shader tech then the level of fidelity isn't that hard to achieve. API development is already well under way.
It didn't take Santa Monica long to make good use of the complicated PS3 Cell tech, PS4 is much easier for them to work with.
Look at what Guerrilla Games managed to achieve at launch, Killzone Shadow Fall is gorgeous, even now.
