Xbox: Banjo Kazooie or Jade Empire 2
PS4: Ideally a new fantasy adventure/rpg IP, but if it has to an established franchise I'll go Okami 2 or Soul Reaver reboot.
Wii U: Tough, I wanna say metroid but I also want that to be a launch title for their next system. Pokemon RPG I guess, fully open world and real time menu based combat (ATB essentially) with dynamic environmental mechanics+destruction; climbing trees, rocks, swimming, diving, flying essentially everything they teased in season 1 of the anime.
