But why would a small, indie UK based developer like Curve Digital hire an australian studio to make the port when they could do it?

well we dont really know if they could, like you say, they're a small indie based dev.   could be creaing another game and just need some sales of stealth inc to keep funding it.

But working on that port would make them learn how to work with those consoles, so they could make their next game for all platforms from the beginning.

Maybe once all is taken into account (cost of dev. kits, wages, bills, etc.) it's cheaper to hire Tantalus than making it by themselves? Who knows.
