A computer controlled opponent will never learn to adapt to you, or take advantage of your bad habits.  Fighting computer controlled opponents will keep you very low in terms of understanding.  Hence why you don't understand the difference between fighting a human or a computer.

It doesn't matter what level you play on, the computer is designed to lose and throw the match in your favor.

Sure, but what is the value of winning a random match online? What progress have I made? Why is it fun? The player might be harder, and that might be more rewarding, but a lot of the reward I get from playing online is the social atmosphere. If the people I play against are random, then that really is not fun to me. Why play online then, other than the added difficulty? Furthermore, random matches in video games tend to be poorly balanced. If I beat somebody it might be because I learned a new skill and was able to use it well or it might just be because they are just starting out in the game and don't know much. If I lose it could be because certain characters are unbalanced. This is a problem even RPG's like Pokemon have. So, again, I don't find it enjoyable without having the social atmosphere. There is no feeling of being rewarded for doing well in a fighting game, otherwise.
