I also like every Ganondorf battle music in the Zelda games, with the Wind Waker's one probably being my favorite.

I agree that KOTOR has fantastic music. Jeremy Soule has definitely earned his place among the best game composers thanks to KOTOR, Skyrim, and several other games imo. 

Listening to it right now makes me want to replay the game again .
