Who said casuals wouldn't want to do that? You could also add a couple signs or something like a shieka stone in giving hints on easy/normal.

It's not hard AT ALL to implement different difficulties without fundamentally changing the game. Again, more options is what is best for everyone. More peope can enjoy the game, hardcore players can keep their difficulty they expect, the game gets a wider audience and more recognition, and the developers get more profits. There are literally no downsides to this.
