A main objective in traditional games with TVs and buttons is to overcome/eliminate obstacles, alive or not, that's why we have zombies, mushrooms and space Natzis. VR could be a whole new gaming medium which opens more levels of interactivity that could see a surge of a new type of games that take advantage of that. But still, there are a lot of horror games being developed for them.

the realistic graphics and desensitization to violice thing is a different subject. 8-bit cartoony blood drops caused an uproar back in the day. It's just context, but artistic design has come a long way and still can improve. But I can't see something more gruesome that can't be done today with upping the pixels, AA and lighting.
