They never effect my purchasing habits at all. However I like to get them in games I like. I don't go for them if it's too much hassle or there are online ones usually (made an exception with TLoU because it was fun online). They're just a fun way to add life to the game once you're done with it and once I get a platinum it usually means I like the game so I'll keep it and go back for subsequent playthoughs on easy once I know I've beaten all the dev's challenges. Besides I've always been a collectible and difficulty guy anyway so they really haven't changed my playstyle that much other than the ones for killing enemies in specific ways which are somewhat entertaining in their own right.
