Okay for starters.
Textures
- The textures aren't awful, but they're not great. Some of them seem muddy and too glossy.
- The water textures also could use some improvement. I'm sure some of it will improve as the game goes further in development, but it's not terribly impressive.
- I wouldn't even compare them to PC games as some have in this thread.
Environments
- Again nothing impressive. The tall rock formations were cool, but not something that hasn't been done before.
- Under close inspection the rock models themselves aren't impressive and I refer back to the texture issue.
- The foilage itself has been done before. Crysis had just as impressive foilage years ago. Not to say that's a bad thing, but it's nothing new.
- Brown/green was heavy in that scene. As with the previous games I'm sure there will be more color in the future previews.
- The rocks and stuff reacting to gun fire and crumbling was a nice touch. I will admit. Nice attention to detail.
Animation
By far the best part of this game so far in my opinion. I love the animation. Especially the facial animation and interaction between characters. The fluidness of the animations was also shown off at the scene where he slides with the gun and jumps onto the enemy. Overall it will be a great game, but I don't believe the visuals deserve the hype. Yet. The ability to hide in foilage was pretty nice.

And going by blurry textures, zero draw distance, low polygons... Would that classify as it being worse than Zelda right? Then do you think Zelda have high res, infinite draw distance and big polygon count?

No. Zelda won't have impressive polygons or super high res textures, but the style it is going with isn't trying to achieve realism. So I suppose my answer would be "These two games cannot be compared." So far as a whole UC4 looks like an excellent game. I just fail to see why it gets all the visual praise.
