I really don't think we should dig too deep into Nintendo's Zelda presentation. Nintendo's goals in this presentation were to show off the vastness of the world, the beautiful graphics, and some of Link's movement/attack options while on horse-back. And I thought they did all of these things well (aside from the fact that the screen was hard to see). But in my opinion, that was way too short of a presentation to start to say that the world is too sparse.
The major issue with the Zelda preview was that it was never meant to be the climatic finale at the end of a super-hyped game awards ceremony. I think that is why most people are disappointed. The clip was meant to be a clinical analysis showing people the type of real-world gameplay that Zelda will be offering gamers (exactly what was missing from E3). Unfortunately, it was plugged into a slot that was meant for a theatrical trailer with flashing lights... This preview couldn't possibly deliver that.
