I recently made my first full revisit of Yoshi's Island after decades and now I realise I'm very critical of many aspects of that game.
I think, like you(OP), having a completionist mindset could be the issue. With some games I never care about collecting everything, but some games I do. For some reason I feel a strong desire to 100% every level in yoshi's island and that's when problems with the game really occur.
Having to stomp down every wooden peg and collect every coin encase you miss a hidden red coin, along with the risk of losing stars (which can force a replay of the level if you're near the goal) it all slows down the pace dramatically and ruins the experience.
I do wonder if my lack of satisfaction with the game is why every subsistent Yoshi game has failed to come close to matching my childhood memories. Here's hoping Woolly World surpasses the original.
