We know plenty about gameplay. Firstly, the game is a spiritual successor of Souls games, so that gives us a rough idea. Secondly, they have shown many gameplay trailers that extensively show how the game is played etc. Thirdly, they have shown a 30 minutes long gameplay video! What more do people want, they want the developers stream the whole game to themselves?
At this point if one still has doubts about this game, they should pass it. They can't be convinced.
