I dunno... guess we should just agree to disagree. Cause I don't know how to tel you that what you are complaining about is not something you should complain about in fighting games.
What makes a new entry of any fighting series different and the small changes they make to the game system and the new chracters they put in. The entire game is for the most part still supposed to feel the exact same. If I am use Paul in tekken 3, i don't want him to feel like i am using law in tekken 6. This applies to every single fightin ggmae out tehre. If they change the kinda things you are talking about, then the seris is no longer true to itself.
If you want different, then simply use the new characters they include in every installment. Having said that, you saying tekken feels "the same" is in no way a bad thing. The most different feeling and hated teken of them all was tekken 4. And they dd good righting that ship with tekken 5.
You are entitled to your opinion, and anyone is also entitled to disagree with you. I just don't really get what you are saying.... ah well.
