Doesn't matter much 99% of the time. You're better of with a GPU that has less VRAM but does the job better. I think there is a single game that recommends 6GB of VRAM (Shadow of Mordor), but that can be credited to pretty shitty optimization.
By comparison Ryse's 4k textures need 4GB, and even that's considered very high. You can max out Crysis 3 at 1080p with 2GB.
