I've actually PLAYED both and Bayonetta has more aliasing, even on the 360 version, than GOW III. Bayonetta 2 however will certainly have less aliasing due to running at a much higher resolution.

There are noticeable polygons in both the environment and the boss itself - they're not aggravating by any means, and the game does look very impressive given the year and console in which it was released, but they're there. It's not aliasing.

I saw the video and no individual polygon can be seen here. It can't be humanly possible to pick out 1 polygon out of over 1 million polygons. You seem to be confusing it with something else.
