What you saw weren't individual polygons lol, they are something known as aliasing. Look it up.
Aliasing is very much prevalent in a game running at 720p on PS3, and even they seem even more glaring in a highly compressed video on Youtube. You can't really judge how a game looks on Youtube.
I've actually PLAYED both and Bayonetta has more aliasing, even on the 360 version, than GOW III. Bayonetta 2 however will certainly have less aliasing due to running at a much higher resolution.
