I think a better phrase is "my interests changed", growing out of it suggests that it's not enjoyable to anyone but children which is far from the truth/just a stereotype about Nintendo games (not saying Nintendo games are super mature and not cartoony but yeah)
Quality is just a matter of disagreeing haha, I think Nintendo games have in many ways gotten better because of better technology and game standards over the years. And a lot of the standards of other companies in the gaming industry are, in my opinion, crap standards that involve paying way too much for games (the whole deal about taking content OUT of games to make it DLC, etc.), riddling them with unnecessary things, making games way too generic or rushing them and sacrificing quality, etc., so I guess I just can't understand how those standards are appealing to some people, but if they are, then oh well.

I think different people look for different things in games
Personally I see these "mature" stories but most of them aren't even that good. And just because a game is rated M doesn't mean it has a mature or great story. Call of Duty: Ghosts had a terrible story, Titanfall doesn't even really have a story, Dark Souls is just a game of overcomplicated lore, etc., I still enjoyed the latter two (and for what it's worth, beat Ghosts) but I don't even see anything on the story level of those shows you mentioned (GoT, BB), most games are rushed and big companies are under the impression that people aren't interested in good stories, they're under the impression that games have to be visually-pleasing FPS or open-world action games or something to sell (which is why we get so many FPS and such on these consoles), so I don't really expect great stories except from a few games (mostly RPGs/JRPGs who have story as a driving force, and even RPG stories have degraded in the past several years).
I think games should be played for good gameplay first, and everything else after. That's because games are the only thing that can offer good gameplay; movies, books, etc. can offer good visuals, good stories, etc. but not good gameplay.
That being said if people get some sort of satisfaction out of something just being mature, that's on them, I just feel like that's kind of silly. That would be me like me loving Nintendo games just because they're Nintendo games. I should like them because they're good games (and NOT all Nintendo games are good, no game company is perfect).
Anyway, a game is ultimately a combination of lots of factors but I find the most enjoyable experiences are the ones that go back to the root of gaming, before everything was stupidly complicated and things were just plain old fun. I agree that some Nintendo games could benefit from more story, and that's probably better suited to either new IPs or IPs like The Legend of Zelda, Metroid, Fire Emblem, Xenoblade, etc., but at the same time I feel like a gamer who plays games for being good games should be able to enjoy Nintendo's games even if they don't have mature themes in them, because they've got plenty of other things going for them. *shrug*
