The graphics for the Psp content has been improved for the vita, as in it looks the same as Hollow Fragment section. You won't see a difference between them
As for gameplay, the old psp game(the one that released on psp) had some wonky gameplay that I didn't like, but SAO vita uses the new combat system in the psp content section of the game. Basically you won't feel a difference graphically or gameplay wise in the psp/hollow sections of the game, it just feels like a single big game.
