Easier said than done.

Every generation AAA games get more and more complicated. From my experience, I've had several assignments at uni including essays, disserations, and a PhD thesis. I don't know a single person in my department who has finished their thesis on time (it's suppoed to take 3 years). When it came to simpler assignments (essays, even a master's dissertation), all my classmates and I had no problem meeting the deadlines. A PhD thesis is so complicated that it always takes longer than you think. And you can't just say before you start writing it and applying for funding "oh, I'll take 6 years. Thanks". Same (or similar) with AAA games. Just when you think that your game is working great, something is wrong with the code and you either have to start all over again or lose many days/months of work. Maybe the physics don't work as well, maybe the developers are noticing that the game is not fun and need to change something major. You can't predict some things. Hence, it's almost impossible to predict exactly how long something so complicated will take.

My Master's thesis was 6 months late due to the technical difficulties involved with the coding side of things. In short, people who don't work with software have zero idea of the complexities involved with large scale software projects.

With regards to game development, things have becomed exponentially more complicated for devs. People who don't understand this make ignorant comments and expose themselves as fools. Unfortunately the structure of the internet does not allow these people to be suitably embarrassed for their ignorance.
