Of course it's relevant :p More power = more graphical potential. It's down to the developer to take advantage of said higher potential though, the console doesn't just hand you a 'free better graphics' coupon 
Knack isn't the best of examples though. It has terrible art (i think so anyway) and was overshadows by other launch titles, but the game itself was fairly impressive. It was very inconsistent about it though though.
