I tend to trophy hunt after finishing a title, usually with open world/sandbox games. The reason being that trophies quite often lead to an area of the game world the main missions didn't. Trophies encourage exploration in some games.

An example for me would be Shadow of the Colossus. In the PS2 version I didn't bother trying to level up my stamina in order to climb to the secret temple garden. However when I played the game again on PS3 there were trophies associated with getting to the garden and maxing stamina, so I found myself having some fun searching for silver tail lizards (they help increase stamina). Doing so led me all over the map and I enjoyed some map areas I didn't even know existed (including the satisfaction of finally getting to the garden of course).

Other than that though, they aren't necessary to enjoy a game.
