I think you're being a bit judgemental here. It doesn't apply to me but I've seen it happen with many student friends of mine. It's not about self-restraint but living in the moment. Like going to a pub crawl. The fun usually starts after the 5th pub/drink. You may not be able to relate to that, but just because it doens't apply to you, it doesn't mean that you should be passing judgement. Obviously, it's not everyone, but it is for some people. Especially for teenagers who have little self- restraint and that's fine. Making "mistakes" is part of growing up. This gives them the option to make sure they'll get the game when it launches.

It makes sense to you, not everyone. What if you forget to pre-order the day/a couple of days before and you miss the bonus? (I don't care about bonuses, but some people do). Why worry about waiting until the last minute when you can do it earlier and not have to worry about it again?

Because it doesn't make a difference to you? Whether Sony has my money today or the next month, it makes little difference to me; it's not like I'm gonna invest it (all £40 of it). Some times I pay bills (e.g. boradband) to my flatmates before they need the money. So what if they have my money for a month before it's neeeded? At the end of the day, I still pay the same amount.
As for me, I almost never pre-order or buy anything at launch. I wait till it's around £15, because I have enough games already. That doesn't mean I don't see that not everyone thinks like me or assume that there's something wrong with people who don't act like me.
