Are you crazy? Maybe Zelda WW is more demanding than GOW3 too? Racing sims have way more advanced physics and much more variables for each car. Ligthning models are more demanding trying to reproduce real lightining instead of achieving a cartoon style. MK8 uses a relatively simplistic approach for lightning and just adds bloom and blur to an extra flare. None of these things are demanding. Lightning on the track is all baked on textures while even GT5 uses real time variable lightning to the tracks. 

It's a good game and nobody is trying to downplay it. People are just commenting because everyone on the forum was bragging about 1080p@60fps before getting any confirmation, just like people bragged about Watch Dogs at 1080p. But it isn't a technical powerhouse. 720p without AA don't look good. FXAA is pretty common even in 7th gen games (a 7th gen GPU can do it in 1-4ms) and it already generates mixed results in some aspects (but is better than no AA). MK8 isn't technically demanding, it is a very simplistic game fron a technical standpoint. Running at 720p really isn't a good achievement because GT6 runs on the much weaker PS3 at 1440x1080 with AA and 60fps (GT5 would run at 960x1080 with better AA and 60fps) and it is a much more graphically advanced game (tesselation, dynamic lightning for the enviroments, physics, poly count).
