Either Guitar Hero 3 or Guitar Hero Metallica. They'll probably won't be much different.

I was addicted to Guitar Hero in 2007-2009. I played Guitar Hero World Tour a lot too, but obviously less than those two. Played Guitar Hero 5 some but barely touched Guitar Hero 6 because it sucked so much and quality was already declining in previous entries.
