Thief or Deus Ex: I'd make them old style in difficulty, with optional easier settings, like the original ones (and the second Thief too), while using the HW available now for larger worlds and levels, higher world interactivity and, obviously, better graphics, but gameplay and large worlds would have the priority. No day-one DLCs, just successive expansions, no QTEs (yes to a few cutscenes for a few unavoidable plot twists, if necessary, and yes to cutscenes introducing and/or ending missions, but in action the player should always have full control) , no stuff making lame what was originally meant to be hard.
I'd be interested also in Myth and Ultima Online (years ago I had a free trial offer for the latter, but I could never install it because lazy and sloppy MS never corrected a bug in a MIDI driver, used by some cheap audio chipsets that hadn't their own, and back then UO required MIDI).
