Also, if you are using the microwave, get a water spray bottle and spray your food a couple of times before nuking it (obviously don't do this to foods that get soggy, use the toaster for those). This works great on stuff like leftover Chinese. Microwaves do a better job of heating water than almost anything else, so if you make sure everything is a bit wet and just cook it enough to make most of the water steam out, you get nice, hot, evenly cooked food that isn't burned anywhere and doesn't stick together.
If you're cooking a small portion in the microwave and it has a turntable, put the food on the outer edge, not in the center. It will move around and avoid getting stuck in a "hot spot" in the microwave which would cause uneven heating.
