Honestly I think you are confusing being interesting and being funny. Unless I have misread your post, which would be unfortunate.
Being funny isn't a easy thing, and if you over think things then it will most certainly back fire. Saying funny things usually comes naturally.
But of course there is always the being funny by making fun of friends, which anyone can do. Now don't get me wrong this isn't the making fun to put them down, this is something you do with close friends and when hanging out with new acquaintances you start to tell funny and embarrassing events you all have been through. This usually lightens the mood and everyone will jump in with stories, ensuring you get to know these people better and get a good laugh out of it.
Now to me being interesting is something you have to put some measure of work into it, it would involve learning skills like cooking, instruments, another language or on the other hand involve the practice of sports like rock climbing, mountain biking, sky diving, skying etc...
I also find people who know a lot about different foods and travel a lot to be interesting.
I might be wrong but I think funny and interesting are two different things for instance I have friends who I find funny but other than that they are pretty average and I have friends who I find interesting but Niagara falls would dry up before they could make me laugh.
