The first one was better for me. 3 felt to me like they were trying to recreate what made 2 so fantastic, but couldn't quite get there. The game felt a bit like it was just jumping from set piece to set piece at times. I didn't really care for my first time through. Second playthrough I enjoyed it a lot more; wandering the desert was very good, and the horse back/convey level was genuinely fantastic - pure cowboy, but it's still the weakest in the trilogy in my opinion - too many set pieces that feel like inferior versions of Uncharted 2.
The first one was definitely a little raw and unrefined, but it was always lighthearted and charming. The jungle environments were great, the story was good, pure Indiana Jones fun. Gameplay-wise, on the hardest difficulty it was just right - the limited ammo meant you were constantly on the run, trying to use the environment as best you can. It took Gears of War and made it so much more fluid.
Both games had rubbish final bosses though!
