Well, they don't.
It's rather that
1- they have Rugby and, granted, there are lots of differences but overally, it looks the same (oval, hand, big boys), and Rugby under various forms depending on regions (Soule in France for instance) happens to have roots back to the middle-age. Kind of cultural stuff...
2- Watching American Football on TV is soooooo boring. Too much time out and way too much advertising.
Beside that, the number of american football clubs in europe is continually on the rise.
