Simple answer is you're not. I am 100% positive that is pre-rendered. The PS3 is powerful but we're not at a point where that's in game yet. I edited my previous post with the following story but since several other comments were already made after I edited (including yours), I'll just give it its own post.
And about your link: I remember Valve pulling something before Half-Life 2 came out about showing "in-game" action. The developers had a very closed group come in and look at them "playing" the game showing off what the engine could do. Long story short, it was all scripted (wish I could find a link to the story). I'll trust the video when I see the game. Whatever the case, the trailer is pre-rendered.
