Well, when I first dabbled in Eyefinity I wen't with triple 24" 1920x1080 Twisted Nematic panels and I thought that was big enough.
Over time though I got used to the extra screen real estate, so I got something bigger (Triple 1440P 27" panels) and over time I got used to it.
The great thing is when a game supports eyefinity well it can be incredible as the entire game takes up all your vision and peripheral vision.
The downside usually is that in a game... Developers will see fit to lock part of the User interface to the top left and something like the mini-map in the bottom right when generally you're fixated in the middle, so sometimes you don't see something you should be keeping an eye on.
Granted I enjoyed the heck out of Dragon Age 1+2 and Mass Effect 3 in Eyefinity, something like Company of Heroes or Civilization was a complete and utter headache across three screens.
But you do have the choice to play on your primary screen for games that suit it best.
Still even with some of the downsides, I would more than happily drop 10 grand on three 32" 4k panels if I had the cash and the panels available, might happen around tax time next year if all the planets align correctly.
