Sata isn't required to saturate the transfer rates of a mechanical drive.
USB 3.0 can sustain around 600MB per second, mechanical Hard Drives typically only top out at 1/4th of that and the internal drives of the Xbox One and Playstation 4, due to probably using single 500GB platters rotating at around 5400rpm probably hits 110MB.
What *may* take a hit is burst rates. I.E. The bandwidth from a Hard Drives cache rather than the spinning disks themselves, but in the grand scheme of things, it's likely impact on performance will be anemic considering most data will be sequential and random reads/writes from the disks themselves in a normal gaming situation.
Of course, if you *really* wanted to saturate the bandwidth of USB 3.0 using mechanical storage, your only real option is of course a Raid set-up, like with the Lian Li EX-503 enclosure, so you can combine the performance and/or reliability of 5 drives, your load times should be stupidly short with that. :P
